Frostings & Glazes















Frostings are not my favorite things. Usually they are too sweet and have the texture of lard. Yet, a cake is just a quick bread without some kind of topping. I try to get creative here without putting myself in a sugar coma. Drizzling the frosting or glaze around the cake on the serving plate so that your guest can control the amout of topping is my favorite way to serve cake.

Maple Glaze
3 cups powdered sugar
1/4 cup maple syrup
1 tsp honey
1 cup water

Thoroughly combine all ingredients. This makes a great glaze for doughnuts and muffins.

Lemon Glaze
1/4 cup fresh lemon juice
1 1/2 cups sugar

Combine ingredients in saucepan over medium heat for 10 - 15 minutes until transparent stirring constantly.  Test to see if syrup forms a string when poured from spoon. When it does remove from heat and spoon over cake, doughnut or muffin.

Chocolate Sour Cream Frosting
6oz semi-sweet chocolate
4 Tbsp butter
1/2 cup sour cream
1 tsp vanilla
1/4 tsp salt
2  1/2 cups confectioners sugar

Melt chocolate, sugar, and butter over low heat. Remove from heat and blend in sour cream, vanilla and salt. Add sugar and beat well.
